"Thum" is a Lao verb meaning "to smash." It also refers to a famous spicy salad in Southeast Asia, made with shredded unripe papaya, tomatoes, chilies, lime juice, fish sauce, sugar, and fermented shrimp paste. This dish is popular in Laos and northeastern Thailand and is traditionally prepared by smashing the ingredients together in a mortar and pestle.
